Green Bean Bacon Casserole

Ingredients
  

  • 2 cans 14–15 oz cut green beans, drained (rinse to reduce salt)
  • 1 can 10.5 oz cream of mushroom soup
  • ½ cup milk
  • ½ tsp soy sauce
  • ¼ tsp black pepper
  • ¼ cup shredded cheddar optional
  • 4 –6 slices bacon cooked & crumbled (about ½ cup)
  • 1 cup crispy fried onions divided

Method
 

  1. Heat oven to 350°F (175°C). Grease an 8×8 or 9×9 dish.
  2. Cook bacon until crisp; drain and crumble (about ½ cup).
  3. Whisk soup, milk, soy, pepper, and cheddar (if using).
  4. Stir in green beans, ½ cup fried onions, and most of the bacon.
  5. Bake 25 minutes until hot and bubbling.
  6. Top with remaining ½ cup fried onions and reserved bacon; bake 8–10 minutes until golden and crisp.
  7. Rest 5 minutes; serve warm.

Notes

Make-ahead: assemble without topping, refrigerate up to 24 hrs; bake 30–35 min, add topping, bake 8–10.
Fresh/frozen beans: blanch 5–6 min, drain very well; bake may need +5 min.
For extra cheese: add another ¼ cup cheddar under the topping.
