Cajun Shrimp and Sausage Pasta

- 8 ounces of penne pasta
- 1 tablespoon of olive oil
- 4 cups of chicken stock
- 12 ounces of smoked sausage, sliced.
- 1 pound of shrimp, peeled and deveined.
- 2 tablespoons of Cajun seasoning
- 1 cup of half and half or heavy cream
- 2 tablespoons of butter
- 1/2 cup of sharp cheddar cheese, shredded.
- 1/2 cup of mozzarella cheese, shredded.
- Fresh parsley or chopped Parsley flakes for garnish
Instructions
1.In a large pot, bring the chicken stock and olive oil to a boil. Add the penne pasta and cook according to the package instructions. Cooking the pasta in chicken stock with olive oil will prevent it from sticking together and infuse it with extra flavor. Drain the pasta and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until browned and heated through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
3.In the same skillet, add the shrimp and sprinkle with Cajun seasoning. Cook the shrimp until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
4.In the same skillet, melt the butter over medium heat. Add the half and half (or heavy cream) and bring it to a gentle simmer.
5.Reduce the heat to low and let the cream sauce simmer for about 5 minutes, allowing it to thicken slightly. Stir occasionally to prevent sticking.
6.Add the cooked penne pasta, smoked sausage, shrimp, sharp cheddar cheese, and mozzarella cheese to the skillet with the cream sauce. Toss everything together until well combined and the cheese has melted.
7.Season the pasta with additional Cajun seasoning to taste. Stir well to evenly distribute the seasoning.
